Our 2018 Estate Sparkling is made in the traditional method, using classic Champagne grapes from Chardonnay, and Pinot Meunier. This sparkling wine is fun for any occasion. Made from French Colombard, an offspring of Chenin Blanc, we pride ourselves on delivering a robust sparkling made through the Méthod Charmat technique.

Tasting Notes
Clusters were hand harvested at night to ensure gentle processing of cool fruit. At the winery, the grapes were hand sorted, destemmed, and 10% of fruit was left "whole cluster" for complexity. The fruit was fermented in small open top bins with a blend of natural and cultured yeasts. Twice daily hand punch downs continued the extraction process throughout fermentation.The final blend consists of the winemaker's selection of the best barrels.
